麦芽浸膏(肉汤) 深棕色或黄棕色浓厚粘稠液体。有特殊的佳适气味。昧甜。含有糊精、麦芽糖、葡萄糖和其他糖类、蛋白质等。在冷水中大部分溶解,在热水中易溶,溶液微带混浊,放置后有絮状沉淀析出。相对密度1.35~1.43。
